What is COGS?
Cost of Goods Sold, the direct cost of the ingredients or materials in what you sold. For a restaurant it's the recipe cost of dishes served; it's the key input to gross margin.

- KOT
- Kitchen Order Ticket, the instruction sent to the kitchen when a customer orders, listing the items to prepare. Modern POS sends KOTs digitally instead of on paper.
- KDS
- Kitchen Display System, a screen in the kitchen that shows incoming orders live, replacing printed tickets and helping cooks track and time each dish.
